History of Cider

How Cider is made
Cider is made by fermenting the juice of apples. The process typically involves the following steps:
- Selection of Apples: The first step in cider making is the selection of apples. The best cider is made from a blend of apple varieties, including both sweet and tart apples. The ideal apples for cider making have high sugar and acid content, and are usually different from those used for eating.
- Pressing: The selected apples are washed and crushed to extract their juice. This juice is then pressed to separate the solids from the liquid. Traditionally, this was done using a manual press, but today, mechanical presses are used.
- Fermentation: Once the juice is extracted, it is transferred to a container where it is left to ferment. Yeast, which occurs naturally on the apples, will consume the sugars in the juice and convert them into alcohol. The cider can be fermented with the natural yeast, or commercial yeast can be added to control the fermentation process.
- Aging: After fermentation, the cider is aged for several months to allow the flavors to develop and mature. This can be done in barrels, tanks, or bottles.
- Bottling or Kegging: Once the cider has aged, it is ready to be bottled or kegged. Cider can be carbonated, still, or lightly sparkling.
- Serving: Cider is typically served chilled and can be enjoyed on its own or mixed with other ingredients to create cocktails.
